Trim 3 boneless skinless chicken breasts of any fat. Cut into 1-inch, nugget sized pieces.
In a small bowl, whisk together 1/2 cup Frank's hot sauce and 1 large egg until well combined. Place all the chicken pieces into the hot sauce mixture and stir until all pieces are coated.. This may be refrigerated for up to 24 hours in advance to make the flavoring more intense if desired.
In a separate bowl mix together 3/4 cup all-purpose flour, 1/2 cup plain bread crumbs, 1 tablespoon Italian seasoning, 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon black pepper, and 1/2 teaspoon cayenne pepper.
Take the chicken pieces out of the hot sauce and egg mixture. Working in small batches, roll chicken pieces in breadcrumb mixture until well coated.
Pour vegetable oil into a deep sillet or shallow pot to cover the bottom with about 2 inches of oil. Heat over medium-high heat until the oil reaches 350 degrees Fahrenheit. Adjust your heat source as necessary to maintain a consistent temperature.
Working in small batches, place the coated chicken into the oil and fry for 3-5 minutes, until golden, with an internal temperature of 165 degrees Fahrenheit.
Use a slotted metal or wooden spoon to remove chicken bites from the oil and transfer to a paper towel lined baking sheet or plate to drain.
Let cool for at least 2 to 3 minutes before serving.
