Instructions
Pour ½ cup orange juice into a blender. Add 2 to 4 cups baby spinach and blend until smooth.
Add 2 cups hulled strawberries and 1 cup blueberries. Blend until smooth.
Pour the fruit mixture into a medium saucepan. Add ¼ to ½ cup agave syrup, 1 teaspoon vanilla extract, and 5 packets unflavored gelatin.
Cook over medium-high heat, whisking constantly, until the gelatin is completely dissolved, about 3 to 5 minutes.
Line a 13x17-inch rimmed baking sheet with parchment paper. Pour the fruit mixture evenly into the pan.
Let cool to room temperature, then refrigerate for at least 2 hours, or until set.
Cut into squares or use cookie cutters to create fun shapes. Store in an airtight container in the refrigerator for up to 2 weeks.
