This Ginger Glazed Baked Mahi Mahi recipe is easy, healthy, and tasty. Serve this Mahi Mahi with cooked rice and broccoli to have a fantastic complete meal!
Season 4 mahi mahi filets with salt and pepper. Place into a shallow baking dish.
In a small bowl, whisk together 1/2 cup orange juice, 3 tablespoons soy sauce, 2 tablespoons extra virgin olive oil, 1 teaspoon ground ginger, and 1 teaspoon brown sugar.
Pour over mahi mahi. Cover, and let marinate in the fridge for 20 minutes.
Heat oven to 400°F (200°C).
Place the baking dish in the oven and bake for 13-15 minutes, or until the fish flakes easily with a fork.Serve warm with rice, steamed vegetables, or a fresh salad.
