Preheat the oven to 400 degrees F. Lightly grease a baking sheet.
Place 4 boneless pork chops on a cutting board and rub with 4 tablespoons olive oil.
In a small bowl, stir together 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, and 1 teaspoon onion powder. Rub all sides of the pork chops with the seasoning mix. Place the seasoned pork chops on the prepared baking sheet.
Bake in the preheated 400℉ oven for 15 to 20 minutes, or until the pork chops reach an internal temperature of 145 degrees F. (Actual baking time will depend on the thickness of the chops). Serve hot.

Toss 2 cups of your chosen vegetables in 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Add 1/2 teaspoon of garlic powder or 1 teaspoon of Italian seasoning or other herbs for extra flavor. Spread veggies around the pork chops in a single layer on the baking sheet and bake everything in the preheated oven for 15 to 20 minutes.
