Preheat the oven to 275°F (135°C). Line a baking sheet or roasting pan with aluminum foil. Arrange 2 pounds country style boneless pork ribs in a single layer on the prepared baking sheet or roasting pan.
In a small bowl, mix 1 tablespoon smoked paprika, 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon ground mustard. Rub this mixture evenly over all sides of the pork ribs.
Cover the pan tightly with aluminum foil. Cook in the preheated oven for 3 1/2 to 4 hours, or until the ribs are tender and easily pierced with a fork.
Carefully remove the pan from the oven and discard the aluminum foil. Brush 1 cup barbecue sauce generously over the ribs, coating them evenly.
Return the pan to the oven and switch to the broil setting. Broil the ribs for 3 to 5 minutes, or until the barbecue sauce is bubbling and caramelized. Monitor closely to prevent burning.
Notes
Slow Cooker Instructions: Prepare rub and coat ribs. Place in a 6-quart slow cooker, cover, and cook on low 7 to 8. Finish by transferring ribs to a foil-lined baking sheet and brushing with bbq sauce. Place under broiler setting to caramelize the sauce.
