Cilantro-Lime Chicken Pizza has an addicting sauce—a quick blend of green chiles, spices, cilantro, and lime juice—that will have you coming back for slice after slice.
Preheat oven to 500 degrees Fahrenheit and place 2 16-inch prepared pizza crusts onto pizza pans.
In a food processor or blender, combine 2 cups fresh cilantro leaves, 1 (4 ounce can) diced green chiles, 1/4 cup lime juice, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon crushed red pepper flakes, and 1/4 teaspoon salt. Blend until smooth.
Divide the cilantro-lime sauce evenly and spread over the pizza crusts2 16-inch prepared pizza crusts
Add on 1 cup shredded chicken (diced or shredded), scattering out evenly over the pizza.
Sprinkle 4 cups shredded mozzarella cheese evenly between the two pizzas to cover the chicken and prevent it from drying out. Then top with 1 cup diced sweet onion
Bake in the preheated oven for about 10-12 minutes, until the cheese is bubbling and lightly browned.
