4cupswaxy variety potatoescubed into 1/2-1/4 inch pieces
6tablespoonssalted butter
1large yellow onionfinely diced
1tablespoonminced garlic
4cupscorned beefchopped into 1/2-1/4 inch cubes
Salt and pepper to taste
Parsleyoptional, for garnish
Instructions
Bring a pot of water to a boil and add the cubed potatoes. Cook for 7-8 minutes, then drain and pat dry.
In a large skillet, melt the butter over medium-high heat. Add the diced onion and cook for 5 minutes.
Add the minced garlic and sauté for 1 more minute.
Add the potatoes and corned beef to the skillet and gently stir to combine.
Reduce the heat to medium and use a spatula to break up the hash into smaller pieces, if desired. Press the mixture down in the skillet to ensure even browning. Cook for 7-8 minutes without flipping.
Flip the hash and cook for another 7-8 minutes until it is browned to your liking.
