Ingredients

boneless skinless chicken breasts

medium
white onion
diced

sliced carrot

sliced celery

grated ginger

minced garlic
about 3 cloves

chicken broth

teaspoon
dried thyme
1
teaspoon
dried oregano
12
ounces
egg noodles
1/2
teaspoon
salt
to taste
1/2
teaspoon
black pepper
to taste

tablespoons
chopped fresh parsley
Instructions
Place
2 pounds boneless skinless chicken breasts
into the bottom of a 6 to 8-quart slow cooker.
Top with
1 medium white onion
(diced),
1 cup sliced carrot
,
1 cup sliced celery
,
1 tablespoon grated ginger
, and
1 tablespoon minced garlic
.
Pour in
8 cups chicken broth
and stir in
1 teaspoon dried thyme
and
1 teaspoon dried oregano
.
Cover with the lid and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is tender.
Remove the chicken and shred with forks. Return the shredded chicken to the slow cooker.
Stir in
12 ounces egg noodles
, cover, and cook on high for 12 to 15 minutes, until the noodles are soft.
Taste and season with
1/2 teaspoon salt
and
1/2 teaspoon black pepper
, to taste. Stir in
3 tablespoons chopped fresh parsley
and serve immediately.
