In a large mixing bowl, combine 1 tablespoon instant dry yeast, 1 cup warm water, and 1/4 cup honey. Add 1/4 cup melted butter, 1 teaspoon salt, and 1 large egg. Stir until the mixture is fully combined.
Gradually add 2 1/2 to 3 cups of all-purpose flour, 1 cup at a time, stirring after each addition, until the dough forms a ball and pulls away from the sides of the bowl. The exact amount of flour you add will vary. The dough should be soft but not sticky.
Divide the dough into 12 equal pieces and shape them into rolls. Place them in a 12-inch cast iron skillet, leaving a bit of space between each roll.
Cover the skillet with a clean kitchen towel and let the dough rise in a warm place for about 20 minutes, or until the rolls have doubled in size.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
If desired, brush the tops of the rolls with an additional tablespoon of melted butter right after removing them from the oven.

Notes
No skillet? Bake these in a lightly greased 9x13 pan instead. A light aluminum or glass 9x13 pan might require an additional few minutes of baking.
