Turn your overripe bananas into a moist banana bread with just 9 simple ingredients. Add chopped nuts or chocolate chips, or keep it simple and classic.
Preheat the oven to 325°F (165°C). Lightly grease an 8x4-inch loaf pan.
In a large mixing bowl, whisk together 1 cup banana puree, 1 cup brown sugar, 1/2 cup melted butter, 1 large egg, and 1 teaspoon vanilla extract until smooth and creamy, about 60-90 seconds.
Add 1/2 teaspoon salt, 1/2 teaspoon baking soda, and 1/2 teaspoon baking powder to the wet mixture. Stir until just combined.
Stir in 1 1/2 cups all-purpose flour until just combined. If using nuts or chocolate chips, fold them in gently at this stage.
Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean or with a few moist crumbs.
