Learn how to grill steak perfectly every single time with this easy to follow recipe where steak is seared on a hot grill and cooked to perfection. Grilling steak doesn't have to be complicated!
Remove 2 steaks from the refrigerator as well as from any packaging and place onto a plate or cutting board. Brush each side with 2 teaspoons olive oil to coat.
In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon white pepper, and 1/2 teaspoon black pepper. Rub both sides of each steak with the rub mixture. Let steaks sit at room temperature for at least 30 minutes before grilling, up to 2 hours.
Preheat an outdoor grill to high heat (about 500 degrees). Sear steaks for 3 minutes per side. Reduce the heat to medium-low and continue cooking with the lid closed until the steaks reach the desired level of doneness (130 degrees F for medium-rare). The steaks will continue to rise by about 5 degrees while resting.
When the steaks are removed from the grill, immediately top each with 2 tablespoons butter. Tent loosely with aluminum foil and allow the steaks to rest 5 to 10 minutes before cutting into them.

For a reverse sear: prepare steaks as instructed. Preheat one side of the grill to low heat and the other side to high heat. Start the steak on the low heat side of the grill and cook until it reaches an internal temperature of 110-120 degrees F. Then, move the steak to the hotter side of the grill and sear on each side for 2 minutes.
