Preheat the oven to 350°F (175°C). Line a small baking sheet or small baking dish with parchment paper. Place the 1 (8-ounce) wheel Brie cheese in the lined dish.
Using a sharp knife, slice a grid pattern across the top of the Brie, making 1-inch squares that are about 1/4-inch deep.
Roughly chop 1/4 cup pistachios and sprinkle across the top of the brie. Drizzle the 1-2 tablespoons hot honey over the pistachios.
Bake in the preheated 350 degree oven for 20 to 25 minutes until cheese is warm and melted. Serve immediately with crackers or slices of crusty bread.
