Honey Roasted Caramel Corn is a honey twist on the classic old-fashioned treat. We pop our own popcorn from kernels, candy them with honey, and mix in honey-roasted peanuts for the ultimate caramel corn goodness.
Place the popcorn kernels in a large pot. Add the cooking oil. Cover and cook over medium heat until most kernels have popped and there are several seconds between pops.
Spread the popped popcorn on a large baking sheet. Add the roasted peanuts.
In a small saucepan, mix brown sugar, honey, butter, and salt. Bring to a boil over medium heat. Simmer for 5 minutes, stirring constantly.
Remove from heat. Stir in baking soda and vanilla extract. Pour immediately over the popcorn mixture.
Bake in a 250°F oven for 1 hour, stirring every 15 minutes.
Line a clean baking sheet with wax paper. Transfer the caramel corn onto the wax paper, separating into pieces. Allow to cool completely.
