In the bowl of a stand mixer, combine 1 1/2 tablespoons instant dry yeast, 1 1/2 tablespoons brown sugar, 1 1/2 teaspoons salt, 2 cups warm water, 3 tablespoons olive oil, and 5 cups all-purpose flour.
Knead on low until dough starts to come together. Continue kneading until the dough forms a nice, soft dough ball and the sides of the bowl are clean. Add more flour if needed to achieve a soft, smooth dough.
Transfer to a lightly greased bowl, cover, and let rise for about 90 minutes, until double in size.
Divide the dough into four equal pieces and roll out into pizza crusts.
Preheat oven to 500 degrees Fahrenheit.
Place crust on a lightly greased baking sheet or pizza pan, or dust the pan with a light layer of cornmeal to prevent sticking.
Top with desired sauce, cheese, and other toppings.
Bake in a 500℉ oven until cheese is bubbly and browned, about 10 to 15 minutes.
