flour tortillas

shredded cheddar cheese

cooked and crumbled bacon
or diced ham or cooked ground sausage

salsa
Guacamole

Instructions
Melt 1 tablespoon butter in a large skillet over medium heat.
Scramble the eggs in the pan and season with salt and pepper to taste.
When the eggs are nearly cooked, reduce the heat to medium-low. Spread the scrambled eggs evenly across the pan.
Sprinkle 1/2 cup of the cooked, crumbled meat and 1/2 cup of cheese over the eggs. Place a tortilla directly on top.
Allow the cheese to melt for about 1 minute, then use a spatula to carefully flip the tortilla so it's on the bottom.
Spoon 1 tablespoon of salsa onto the tortilla. Let it cook for an additional 1-2 minutes, then fold in half.
Repeat the process for the remaining tortillas, adding more butter to the pan as needed.
Remove the quesadilla from the skillet and cut it into wedges.
Serve the quesadillas with guacamole, sour cream, and extra salsa on the side.
