In a large skillet, heat olive oil over medium-high heat. Sauté minced garlic for about 1 minute or until fragrant.
Pour chicken broth into the skillet and bring to a simmer.
Place baby bok choy in the simmering broth. Season with salt and pepper. Cover the skillet, reduce heat to medium-low, and allow to simmer and steam for 5-6 minutes or until the bok choy is tender yet crisp.
Drizzle the baby bok choy with lemon juice and serve immediately.
