30 Minute Taco Soup is as ridiculously delicious as it is easy to make! Everything is tossed together in a single pot, for a flavorful soup in just 30 minutes. You’re going to be seriously amazed!
Heat a large pot over medium-high heat. Add 1 pound ground beef and chopped onion. Cook, stirring occasionally, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
While the ground beef is cooking, make the taco seasoning mix in a small bowl. Stir together 1 tablespoon chili powder, 2 teaspoons paprika, 1 teaspoon ground cumin, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/4 teaspoon cayenne pepper.
Add the minced garlic and cook for 1 minute, stirring constantly. Then, add the taco seasoning mixture. Stir to coat the beef and let the seasonings cook for 30 seconds to release their flavors.
Pour in 2 cups chicken broth, 2 cups beef broth, 2 (15 ounce cans) diced tomatoes, 1 (15 ounce can) black beans, 1 (15 ounce can) pinto beans, 1 cup frozen corn, and 1 (7 ounce can) diced green chiles. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-25 minutes to allow the flavors to meld.
Ladle the soup into bowls and serve hot with your favorite toppings, such as shredded cheese, sour cream, diced avocado, or tortilla chips.
