2poundsred potatoescubed
1smallwhite oniondiced
2tablespoonsbutter

1tablespoondijon mustard
1/2teaspoonoregano

Instructions
Preheat oven to 375 degrees. Lightly grease a 9x13 baking pan with nonstick cooking spray.
Spread out the cubed potatoes in the pan in a single layer.
In a small saucepan, melt the butter over medium heat. Add in the onions and saute for about 3 minutes. Add in the honey, mustard, oregano, salt, pepper and stir to combine.
Drizzle the butter mixture over the potatoes.
Bake for about 35 minutes until potatoes are cooked through. Actual baking time will depend on how big you cut your potato pieces.
