Ingredients
Casserole
1loafFrench breadsourdough or challah
8largeeggs
2 1/4cupswhole milk
1teaspoonground cinnamon
1/2cupbrown sugar
1tablespoonvanilla extract
Streusel Topping
2/3cupbrown sugar
2/3cupall-purpose flourspoon & leveled
2cupscinnamon toast crunch cerealcrushed
1teaspoonground cinnamon
1cupunsalted buttermelted
Optional toppings: fresh fruit, maple syrup, and/or powdered sugar
First, make the crumble. Line a large baking with with parchment paper or a silicone baking mat and set aside.
In a large bowl combine all streusel ingredients including brown sugar, flour, cereal, cinnamon and melted butter. Use a rubber spatula to mix thoroughly into a wet, gritty mixture. Pour out onto prepared baking sheet to dry slightly while preparing the casserole. It will be more dry and crumbly.
To make the casserole, spray a 9x13 inch pan with nonstick spray. Slice then cube the bread into 1 inch pieces. Spread bread into the prepared baking dish and set aside.
Whisk the rest of the casserole ingredients together including the eggs, milk, cinnamon, brown sugar, and vanilla until no lumps remain. Pour liquid ingredients over the bread. Cover tightly with plastic wrap and chill in the refrigerator for at least 3 hours or overnight if possible.
Once chilled, preheat oven to 350°F. Remove pan from the refrigerator and sprinkle on streusel topping. Bake in preheated oven for 45-55 minutes, or until golden brown on top.
