Instructions
Preheat the oven to 350 degrees F and lightly grease a 9x9 baking pan.
In a large mixing bowl, mix peaches, lemon juice, sugar, cornstarch, cinnamon, and vanilla. Transfer this mixture into the prepared baking pan, including all the juices.
In another bowl or a food processor, combine flour, sugar, and cinnamon. Using a pastry cutter or food processor, cut in the cold butter until well combined with clumps of varying sizes.
Sprinkle the crumble mixture evenly over the peaches.
Bake uncovered in the preheated oven for 40-45 minutes, or until the crumble topping is toasted and lightly browned.
Serve with a scoop of vanilla ice cream, if desired, and enjoy!
