Add eggs and mix for about 30 seconds. Then, add the vanilla extract, orange juice, orange zest, salt, and baking powder. Blend until smooth, about 1-2 minutes. Ensure you scrape the sides and bottom of the bowl so that everything is mixed thoroughly.
With the dough attachment, gradually add the flour and mix just until incorporated. Avoid over-mixing the dough. Gently fold in the white chocolate chips.
Preheat the oven to 325°F. Prepare a baking sheet by spraying it with nonstick spray.
Form the dough into balls, using roughly 2 tablespoons for each. Place them on the baking sheet, ensuring there is about 2 inches of space between each cookie. Bake for 9-11 minutes.
Once baked, allow the cookies to remain on the baking sheet for at least 5 minutes before transferring them to a wire rack to cool.
