Preheat an outdoor pellet smoker to 225 degrees Fahrenheit.
In a small bowl, mix together salt, pepper, and garlic powder.
Rub tri-tip with olive oil on all sides. Season with spice mixture and rub on all sides.
Place tri-tip on the smoker. Close the lid and smoke until the internal temperature of the beef reaches 125 degrees F, which will take approximately 90 minutes, but will depend on the thickness of your tri-tip. Use an internal probe or thermometer for best results.
Remove tri-tip and place on a cooking sheet and loosely wrap in foil. Increase the temperature of the smoker to 450 degrees Fahrenheit. Once it has reached that temperature, place the tri-tip back on, baste with melted butter and finish searing it on both sides until the internal temperature has reached 145 degrees Fahrenheit or your desired finish.
Remove and let rest 5-10 minutes before serving. Make sure to slice against the grain!
