Instructions
Heat olive oil over medium heat in a large skillet. Sauté chopped onion for about 5 minutes until soft and translucent.
Add minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until garlic becomes fragrant.
Mix in dried basil and canned tomatoes, simmering the sauce for about 10 minutes until it thickens slightly.
Pour in vodka and stir.
Add heavy cream, salt, and black pepper. Simmer the sauce for an additional 5 minutes until it reaches your desired thickness.
Add 1/4 cup grated parmesan cheese to the sauce and simmer for another 1-2 minutes until the cheese melts and the sauce smoothens.
Taste the sauce, adding more salt and pepper if needed.
Cook penne pasta according to package instructions until al dente. Before draining, reserve 1 cup pasta water.
Add cooked penne pasta to the skillet and coat it well with the sauce. If sauce is too thick, add reserved pasta water to thin it out.
Serve Penne alla Vodka hot, garnished with the remaining 1/4 cup grated parmesan cheese and chopped parsley.
Optional: Blend the sauce with an immersion blender until it reaches your desired consistency.
