Instructions
Combine blueberries, sugar, water, and lemon juice in a medium saucepan.
Stir the ingredients together and place the saucepan over medium heat.
Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 10 minutes. Remember to stir occasionally.
After 10 minutes, remove the saucepan from the heat. Add in the optional vanilla extract.
Serve the syrup over ice cream, with breakfast foods, or as a topping for cheesecake.
