Easy Roasted Parmesan Pesto Potatoes
Easy Roasted Parmesan Pesto Potatoes is an easy side dish that is full of flavor. Red potatoes are coated with a basil pesto and parmesan cheese and roasted to perfection. You'll love it!

- 2 pounds red potatoes
- 1/4 cup prepared pesto sauce
- 3 tablespoons butter melted
- 1/2 cup freshly grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup minced fresh parsley
Preheat oven to 400 degrees.
Quarter the potatoes and place into a large mixing bowl.
Toss potatoes with pesto sauce, melted butter, parmesan cheese, salt and pepper until evenly coated.
Spread potatoes out into an even layer on a baking sheet.
Bake in the preheated oven for 30 minutes, or until potatoes are fork tender.
Garnish with parsley.
