This quinoa salad is filled with fresh ingredients and has tons of flavor and served cold, making it great for parties - it's one of our favorite quinoa salad recipes!
Servings: 6 Servings
- 4 cups quinoa cooked
- 1 cup chickpeas cooked
- 1 cup cucumber chopped
- 3/4 cup peppers chopped
- 2 tablespoons parsley chopped, fresh
- 1 teaspoon kosher salt
- 1 lemon juiced
- 1 tablespoon olive oil
- 1/4 cup feta cheese
In a large bowl dump in the quinoa and break apart.
Toss in the remaining ingredients and mix together.
Garnish with some extra feta cheese and chopped parsley if desired.
