  • 1 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini


  • Preheat oven to 325 degrees F and lightly grease one 8x4 inch loaf pan.
  • In a large mixing bowl, stir together flour, wheat flour, salt, baking soda, baking powder, and cinnamon.
  • Pour in applesauce, honey, egg, and vanilla extract until combined.
  • Use a rubber spatula to fold in grated zucchini. Transfer to the prepared pan.
  • Bake 50-60 minutes until a toothpick inserted into the center comes out clean.
