Ingredients

tablespoon
olive oil

small yellow onion
diced

jalapeno
seeded, finely diced

cloves
garlic
minced

teaspoon
ground cumin
1
teaspoon
salt
1/2
teaspoon
cayenne pepper

(15 ounce) cans
black beans
undrained
1/2
cup
chipotle chiles in adobo sauce
blended
1/8
cup
water
2
tablespoons
lime juice
1/4
cup
fresh cilantro leaves
chopped
1/4
cup
cotija cheese
for garnish
Instructions
Heat a heavy skillet over medium-high heat. Add in the olive oil and let heat briefly.
Add in onion and jalapeno and sauté for 5-7 minutes, until soft.
Add in minced garlic, cumin, and salt. Sauté another 60 seconds.
Add in black beans, chipotle chiles, water, and lime juice. Let simmer for 5 minutes.
Using an immersion blender, blend the ingredients to the texture you desire.
Top with cilantro and cotija cheese. Serve with chips and enjoy!
