Chipotle and Lime Chicken Thighs require only a handful of ingredients, can be cooked in the oven or on the grill, and are juicy, crispy, and full of smokey flavor!
Heat oven to 425 degrees. Lightly grease a 9x13 baking dish with non stick cooking spray.
Lay out the chicken thighs in the prepared pan, skin-side up. Squeeze the lime juice all over the meat.
Combine the spices in a small bowl, sprinkle generously all over the meat.
Divide the butter into 8 pieces. Place a piece onto each thigh.
Bake for about 40-45 minutes, basting every 15 minutes with the juices in the pan.
Broil the last few minutes to really crisp up the skin. Watch closely. Remove from oven, rest for about 5 minutes and enjoy!
Grilling
Follow all prior instructions for prepping chicken but do not place butter on top of the chicken thigh.
Place the chicken directly on the grate of a preheated grill. Medium to high is where you want the temperature but all grills vary.
Using the butter in the recipe, melt it and baste the thighs with it every 5 minutes. Flip occasionally and cook until the thigh internal temperature reaches 165-170 degrees, about 25-30 minutes.
