Homemade salsa is easy to make and so delightfully bright and flavorful. We've included a few salsa varieties beyond the base recipe, and canning instructions as well!
Place minced red onion into a large bowl. Drizzle with lime juice and let sit while preparing the rest of the ingredients.
Add in diced roma tomatoes, cilantro, jalapeno, and garlic.
Stir until well combined. Season with salt to taste.

Notes
For Tomatillo Salsa (Green Salsa or Salsa Verde): simply replace the roma tomatoes with husked and quartered tomatillos. For Roasted Tomato Salsa: place the roma tomatoes onto a baking sheet and place 6 inches beneath the broiler in your oven. Broil until the skins are blackened, rotating every few minutes. Once skins are blackened, let cool and remove peels. Then proceed with the recipe as written.
