Ingredients
5mediumrusset potatoespeeled and diced
2cupschopped kale
2tablespoonssliced green onion
1/2cupwhole milk
1/4cupbutter
1/2teaspoonsaltto taste
1/4teaspoonblack pepperto taste
Instructions
Peel and dice 5 medium russet potatoes. Place them in a large saucepan and add enough water to cover them by about an inch. Bring to a boil over medium-high heat and cook for 12–15 minutes, or until the potatoes are fork-tender.
While the potatoes cook, add 2 cups chopped kale2 tablespoons sliced green onion, 1/2 cup whole milk, and 1/4 cup butter to a small saucepan. Cook over medium-low heat until the butter is melted and the mixture is steaming, but not boiling, about 3–4 minutes. Remove from heat.
Drain the cooked potatoes and return them to the saucepan. Pour the warm milk mixture over the potatoes and mash until smooth and creamy. Add more milk if needed to reach the desired consistency.
Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, adding more to taste. Serve warm.
Notes
If kale isn’t your thing, swap it for the same amount of shredded cabbage.
