Instructions
Melt butter in a large pot over medium high heat. Add in onion, celery, and carrots and saute 5 to 7 minutes, until onions are soft and translucent.
Stir in peas, water, and chicken broth. Bring to a boil. Add in ham hocks and thyme.
Reduce heat to medium low. Cover and simmer 90 minutes until peas are tender and ham is easily removed from bone.
Remove ham hocks and shred ham from the bone. Discard bone and chop ham into small, bite-sized pieces.
Transfer soup to a blender and puree until smooth.
Stir ham into soup, season with salt and pepper to taste, and serve hot.
