Irish Soda Bread is a dense and moist bread that requires no rising time and just four simple ingredients to make, all ready in just 45 minutes, start to finish.
In a large bowl, whisk together the salt, baking soda, and 2 1/2 cups of the flour. Add the buttermilk, raisins (if using), and caraway seeds (if using). Stir just until the dough comes together.
Turn the dough out onto a lightly floured surface. Knead until it forms a smooth ball, gradually adding additional flour as needed to achieve a dough that is firm but not sticky. Dust the outside of the dough ball with more flour and then place the dough on an un-greased baking sheet. Use a sharp knife to slash a 1-inch-deep cross on top of the loaf.
Bake for 35 minutes or until golden brown.

*This bread is a salty bread. If you are sensitive to salt or prefer it to be more plain, you can reduce the salt to 1 teaspoon.
