Strawberry Pie

  • 1 baked deep dish pie shell
  • 6 cups sliced fresh strawberries divided
  • 1 cup sugar
  • 3/4 cup water
  • 3 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 tablespoon butter

Cream Cheese Whipped Topping

  • 1 cup heavy cream
  • 3 tablespoons cream cheese softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

  • Slice strawberries. Mash some of the strawberries until you have 1 cup mashed. Place the remaining strawberries into the baked pie shell. Place into the refrigerator for later use.
  • Place 1 cup mashed strawberries into a large saucepan. Stir in sugar, water, cornstarch, and lemon juice. Bring to a boil and cook 1 minute until thickened. Remove from heat and stir in butter until melted.
  • Allow mixture to cool, 1 hour. Pour cooled mixture over the strawberries. Return pie to the fridge until set, about 4 hours.
  • In a large mixing bowl, use a hand mixer to beat heavy cream with cream cheese, sugar, and vanilla extract until stiff peaks form. Transfer to a piping bag to pipe designs onto finished pie, or serve each slice with a dollop of whipped cream.
