In a large mixing bowl, whisk together the milk and eggs.
Add in the flour, brown sugar, rum, cinnamon, vanilla extract, and salt. Whisk until the mixture is smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Soak each slice of bread in the egg mixture until it is saturated, then cook the bread on each side until it is golden brown.
To make the rum sauce, heat the butter, brown sugar, cinnamon, and nutmeg in a large skillet or saucepan over medium heat. Stir frequently until the mixture becomes bubbly. Cook for an additional 3-4 minutes.
Add in the sliced bananas and gently stir and cook until they become tender, which takes about 4 minutes.
Turn off the heat and remove the skillet or saucepan from the stove. Add in the rum, and then carefully ignite it. Swirl the pan until the flames go out. (Alternatively, you can pour the sauce over the french toast and then light it for a special effect!)
Drizzle the rum sauce over the cooked french toast and serve. Optional: top with walnuts or pecans.
