Preheat the air fryer to 375-380 degrees Fahrenheit.
Wash and dry the sweet potatoes. Optionally, peel the potatoes before cutting. Cut the potatoes into uniform sticks, approximately 1/4-inch thick.
Place the potato sticks in a bag, and toss with cooking oil and kosher salt.
Place about half of the sticks in the air fryer, ensuring they are not crowded and none of the sticks are touching. Fry for 12-15 minutes, flipping the sticks halfway through the cooking time. Note: Air fryers may vary in size, so adjust the number of sticks accordingly.
Once the potatoes are tender-crisp, remove them from the air fryer and sprinkle with any desired herbs or black pepper.
Cook the remaining potato sticks in batches as needed.
