Preheat your oven to 350°F (180°C). Grease two baking sheets with nonstick cooking spray or line them with parchment paper.
In a large bowl, use a hand mixer to cream together the butter, brown sugar, and granulated sugar.
Beat in the eggs and vanilla until the mixture is smooth.
Stir in the baking soda, salt, and flour until a dough forms. Mix in the M&Ms with a spoon.
Take 2 tablespoons of dough and use your hands to quickly shape it into a ball. Place the dough balls on the prepared baking sheets, about 12 per sheet. This recipe should make about 24 cookies total.
Bake the cookies in the preheated oven for 10-12 minutes, until they are just barely browned. Do not overbake.
Remove the pan from the oven and let the cookies cool on the pan for 3-5 minutes. Then transfer them to a wire rack to cool completely. Once cooled, store the cookies in an airtight container.
