Creamy, velvety, and oh-so comforting, our Cream of Broccoli Soup is the perfect simple yet satisfying recipe. With just a handful of ingredients, you can easily recreate the flavor of mom's homemade soup. Serve it as a side or enjoy it as a light lunch - either way, it's sure to hit the spot!
In a large pot, heat butter and olive oil over medium-high heat. Add the onions and cook for 6-8 minutes, stirring occasionally, until they start to soften. Add the garlic and sauté for 1 minute.
Stir in the thyme, oregano, and flour and cook until the flour becomes golden, about 2 minutes.
Pour in the vegetable broth, milk, and heavy cream. Stir constantly until the mixture comes to a simmer. Add the broccoli florets and reduce the heat to low.
Simmer until the soup has thickened and the broccoli has softened, about 8-10 minutes.
Using an immersion blender, carefully purée the soup until smooth. Alternatively, you can ladle the hot soup into a blender with a vented lid and pulse it until smooth.
Season the soup with salt and pepper to taste. Serve hot.
