Homemade, no-simmer Strawberry-Nectarine Fruit Leather is the perfect summer treat and back-to-school lunchbox delight! Easy to make, even without a dehydrator.
In a high-powered blender, puree strawberries (or other fruit) and sugar until smooth.
Line two 13x18 baker's half sheet pans or jelly roll pans with parchment paper.
Pour half the fruit puree onto one pan and the remaining half onto the second pan, spreading it evenly.
Place the pans on separate racks in the oven. Set the oven to its lowest setting, ideally 200 degrees or below. The goal is to dehydrate the fruit, not cook it.
Depending on your area's humidity, dehydrating can take between 2 to 12 hours. In high humidity areas, it may take longer. The fruit leather is ready when it feels dry and is no longer tacky to the touch.
Once done, remove from the oven and let it cool slightly. Peel off the parchment paper, cut the fruit leather into strips, and roll them up. You can tie the rolls with kitchen string if you like.
Store the fruit roll-ups in an airtight container. They will stay fresh for up to a month.
