Cut the bacon in half to double the number of strips available. Wrap each pineapple chunk with a bacon strip and place them seam side down on the prepared baking sheet.
In a small mixing bowl, combine the brown sugar, honey, lime juice, sriracha, and soy sauce. Drizzle this mixture over each bacon-wrapped pineapple piece to glaze.
Evenly sprinkle the cilantro stems over the glazed pineapple pieces.
Bake in the preheated oven for 25-30 minutes or until the bacon turns crispy.
Insert toothpicks into each bite-sized piece for easy serving and garnish with the chopped fresh cilantro leaves.
