– Wash potatoes. Thinly slice the potatoes using a mandolin, knife or food processor and as you slice them, add them into a bowl of cold water.
Heat the oil in a heavy duty pan until the oil reaches 350 degrees Fahrenheit.
Rinse the starches off the potatoes and drain off all water. Place the potato slices on a towel and dry thoroughly.
Working in batches, place a handful of the slices safely into the oil and fry. Do so by lowering the potatoes into the oil with a metal slotted spoon.
Once, they have turned a more golden color, about 2-3 minutes, remove from oil and place onto a paper-towel lined cookie sheet.
Season up immediately while the chips and oil are still hot to ensure as much sticking of the seasonings as possible. Enjoy!
