The Most Amazing Vanilla Cupcake Recipe is an easy to make one-bowl recipe. You’ll never need another boxed mix again!

  • How do you make cupcakes extra fluffy?

This cupcake recipe is already quite fluffy. For an extra fluffy cupcake, separate your eggs. Add the yolks in to the batter and beat the egg whites separately. Fold the egg whites in with the finished batter for the ultimate fluffy cupcake.

  • How do you know if your cupcakes are done?

Gently tap the top off the cupcakes. If they feel springy and bounce back, they are done. If they jiggle, it means that the centers are not yet baked through. You can also use the toothpick test and stick a tooth pick into the center. If it comes out clean, your cupcakes are done.

  • How do you fill the inside of a cupcake?

Filled cupcakes are so delicious! If you want to add a filling to your cupcake, make the cupcakes according to the recipe. Once they are completely cooled, place your filling into a piping bag with a wide, open ended tip. Place the tip directly into the top of the cupcake and squeeze about 2 teaspoons of filling inside. If you try to add too much, your cupcake will split.

CUPCAKE BAKING TIPS:

  1. Do not over mix your batter. You should only mix it until the ingredients are just combined. Over mixing will develop the gluten in the recipe which will make your cake rise beautifully in the oven, and then fall as soon as it is removed.
  2. Keep the oven door closed! If you want to check on your cupcakes, simply peak through the window. Opening the door lets heat escape and lets cold air rush in. This creates uneven baking, especially with cupcakes.
  3. Bake cupcakes in the center of the oven for the most even distribution of heat.
  4. Remove the cupcakes from the pan immediately after removing from the oven and transfer to a wire rack to cool. Letting them stay in the pan will continue baking the cupcakes and could dry out your cupcakes.
  5. Store cooled, frosted cupcakes in an airtight container to keep them from drying out.

Hi, this is a little late, but I’d assume right after you have your batter (having mixed all the ingredients together)

Sometimes when I put cupcakes in the fridge overnight they turn dry, but leaving them at room temperature overnight shouldn’t be a problem!

Can i use margarine instead of the salted butter

We do not recommend substituting margarine in any baking recipe.

I actually use margarine in all my cakes and it tastes great. Butter is not readily available and expensive here in Ghana.

I am unable to process butter or margarine. Would you happen to have a cupcake recipe without butter? Many thanks

This recipe really does need the butter. The only suggestion I could give is to substitute the butter with a vegan butter stick substitute (not in a tub). Earth Balance is a common brand, but tends to be expensive. However, it is mostly made from oil, and because we haven’t tried it, we can’t guarantee how well it will turn out.

You could try country crock veggie butter. It tastes and cooks like butter. I use it for everything. Not sure if this helpful but I hope so. Stay safe.

Is it posdible to substitute buttermilk? I live in Italy and I am not able to buy it locally.

Yes, you can easily make your own buttermilk substitute. Here is a post devoted entirely to making your own buttermilk out of regular milk: https://thestayathomechef.com/buttermilk-substitute/

Hi you can make buttermilk at home, just add 1 tbsp of vinegar or lemon juice in a cup of milk. Let is sit for 5 mins till its becomes a bit clumpy.

Perfect. I added poppy seeds and they had the extra crunch.
