Delicious roasted vegetables glazed with buttery brown sugar are one of my favorite fall and winter side dishes. This recipe only requires a few ingredients, but sometimes simplicity is all you really need to let vegetables shine. Roasting vegetables brings out such a beautiful caramelized flavor that this recipe is sure to be a shining star on the dinner table.

Yield: Serves 4 to 6
Ingredients
1 pound brussel sprouts, trimmed and halved
6 large carrots, peeled and cut into 1/2 inch pieces
salt and pepper
1/4 cup butter, melted
1/4 cup brown sugar
Instructions
1. Preheat oven to 400 degrees. Lightly grease a baking sheet.
2. Place halved brussel sprouts on baking sheet and toss together with carrot chunks. Season with salt and pepper.
3. Stir together melted butter and brown sugar. Pour over brussel sprouts and carrots.
4. Roast in the preheated oven for about 30 to 35 minutes until tender. Actual roasting time will depend on how big your brussel sprouts and carrot pieces are.
