Instead of beans, you can also try using oat flour for another gluten free option! =) Just grind some oatmeal in a blender or food processor until fine, and voila, oat flour! Maybe the cookies may not come out as chewy (the one time I tried, it turned out the crispy kind of cookie (biscuit?) and a tad bit dry/coarse, maybe it's an oatmeal thing. Then again I might have used too little butter >__< ) But it works! My boyfriend never guessed I used oat flour instead of regular dough flour. =P
