It is the developed ovary of a plant so it is a fruit, but the USDA has ruled it a vegetable because of how it is grown and cultivated. Fregetables, like fruits and vegetables, are just fabulous on the grill. I decided to give a cilantro-lime version a try because what isn’t great with cilantro and lime?
The result was something I absolutely loved. I can totally see watermelon as a vegetable after having this dish. It brings out a smokey and savory quality to watermelon that I didn’t really know existed. It’s important to top it off with a little salt.
