While a double boiler is nice, it is not necessary. You can instead use a small saucepan with simmering water and a metal or glass bowl on top.

I made icing without double boiler and it turned out perfectly,
My mother always used this kind of frosting on her coconut cakes..Always on my brother’s birthday..He’ll be 75 tomorrow ( Ground Hog Day )..so, I’m going to try to make it too…hope it brings back memories for him of her making it his whole life..( but I am cheating & using a white cake..I did add vanilla flavor flavoring to enhance flavor.
